Napa cabbage, also known as Chinese or celery cabbage, is milder and sweeter than regular cabbage. Its white stalks and crinkly, pale green or yellow leaves may be eaten raw or cooked.
Store the entire head of Napa cabbage with its outer leaves intact in your refrigerator in a plastic bag or plastic wrap. When you are ready to eat it, remove the outer leaves, cut it in half lengthwise and rinse throughly. One of the things that makes Napa Cabbage so great to work with is how easy it is to chop up.
